Splitting NIC Traffic

I seem to remember reading somewhere that we could specifiy what services were availalbe on which nic, can someone point me in the right direction as my search fu isn't bringing anything up

essentially i have 3 interfaces and would like to use
1 as management
2 (bonded) for the iscsi / nfs access

I would like to stop iscsi / nfs access on the management one so that its dedicated just to that
